The winery produces wines
from bunches of grapes harvested from vineyards as old
as 80 years. To ensure that grapes are at peak condition
for wine making, we use traditional methods on the grapes,
monitoring them at every stage of their vegetative cycle
until they are manually harvested and carried in baskets
to prevent the grape from getting bruised. Priority is
given to the selection of the best, over-ripen grapes
to attain a decent alcoholic grade and an ideally balanced
wine.
